Roasted Garlic Balsamic Honey Brussels

Cowboy caviar pasta salad

what you need:

•1 - 16oz box of pasta - cooked to box instructions

•3 diced peaches (I like thing sweeter so could have done four!)

•2 avocados diced

•2 diced bell peppers

•1 can chickpeas - drained & rinsed

•1 can black eyed peas - drained & rinsed

•1 can corn - drained & rinsed

•1 can black beans - drained & rinsed

•1/2 onion - diced

•1 tsp of olive oil for pasta

•feta & parm (or just one!) to your preference

Dressing:

•1/2 cup olive oil

•1 lime - juiced & 1/2 lime zested

•3 tbsp of white wine vinegar

•1 tbsp sugar

•salt, pepper, garlic powder & onion powder to preference

What to do:

Get your pasta water boiling & cook to box instructions until al dente. Once pasta is done drain & mix with 1 tsp of olive oil & salt and pepper.

Make your dressing in a large mixing bowl then add your drained & washed beans to it! Give a good stir. Then chop up the avocados, peaches, bell peppers & onions - give another stir. Then add your pasta to the mix!! Top with feta and parm & dig in!! This is the perfect dish to bring to any bbq, potluck, or event this summer. Pairs well with any protein of your choosing or is great on its own!!
