Balsamic Peach Chicken with Mozzarella

Balsamic peach chicken with moz

Quick & delicious balsamic peach chicken with mozzarella - the perfect summer dinner

What you need:

•1 - 2 tbsp of olive oil

•1 small yellow onion - sliced

•1.5 lbs chicken breast (3-4 pieces) - cut in half if very large (like mine)

•1 tbsp of garlic - minced

•1/4 cup of balsamic vinegar

•1 tbsp of honey or maple syrup (your choice // if you have babies under 1 eating)

•3 large peaches - skin removed & sliced

•10-12 cherry tomatoes * could do a whole pint if you don’t want to do 1/2 can of diced tomatoes

•1/2 can of no salt added diced tomatoes - drained! ^see note above

•mozzarella cheese - go with your heart ! No one here is stopping you from adding however much you want!

•salt, pepper, garlic powder & onion powder

•basil for garnish - v important!

•a vessel for the SAUUCEE - note below

What to do:

First things first, preheat your oven to 375 F. Next, prep it all - cut up your peaches, onions & chicken if need be.

In a cast iron pan (or oven safe pan of choice) ((or if you don’t have that a regular pan & you can transfer to a baking dish)) - add your olive oil & garlic. Let your garlic start sizzling then add your chicken (seasoned on both sides in S, P, GP & OP). Cook the chicken over high medium heat for 2-3 minutes on both sides until it starts to brown - do not worry it will finish cooking in the oven!

Place your brown chicken on a separate plate - then add some more olive oil to your pan & then caramelize those onions up. You want these to cook in the pan for about 3-5 mins until they develop a brown ish hue. Then add your balsamic vinegar & stir for about 30-1 minute (it will start to reduce a little that is what we want!). Then stir in your honey. Now, add your tomatoes & peaches. Stir until everything is well combined.

Then, nestle your chicken back into the cast iron & pop into the oven for 8 minutes. Pull it out, top with cheese, then put it back in for another 7-8 minutes. Cheese should be melty & you can also broil to get the cheese meltier! Always make sure to check your chicken & see if it’s at 165 internal temp. Then garnish with basil (MUST!) and dig in.

**yall. I was DRINKING this sauce with a spoon - straight up. You will want & need a nice sturdy base to put this chicken/tomato/peach meal on. We put it on pasta but it would have been UNREAL with a mashed potato! A rice would be good too, something starchy like that to soak up allllll the sauce
