Roasted Garlic Balsamic Honey Brussels

Honey soy sheet pan

👩🏼‍🍳What you need:

🍗For chicken & marinade

•1-1.5 lbs of boneless & skinless chicken thighs (we cooked four but easily could have devoured 6-8 and the marinade would work!).

•2 tbsp of low sodium soy

•1.5 tbsp of honey

-For spices - I used 1/4 tsp of the following:

•cinnamon

•ground cloves

•fennel seeds

•umami seasoning

•onion & garlic powder

🥦For veggies:

Honestly use your favorite veggies! We used the following && I recommend:

•4-6 mushrooms diced

•2 bell peppers (any color)

•as many broccoli florets as you want

•1 onion diced

•1 tbsp of olive oil

•1 tbsp of soy

•1/2-1 tbsp of garlic (measure with your heart!)

🥄for spicy mayo:

I measured with my heart here! But used (plant based hellmans) mayo, sriracha (sky valley), 1/2 lime & a tiny bit of toasted sesame oil.

🏃🏼‍♀️‍➡️What to do:

Preheat oven to 375! Then, make marinade for chicken in a large bowl & mix well. Add chicken thighs & then place to the side.

Chop your veggies & put on sheet lan. Then pour on oil, soy sauce & garlic - mix all together right on tray - then add your chicken to sheet pan. Put in the oven for 30ish minutes until your chicken is 165! For the sauce - just mix all ingredients together 👏🏻
