Crockpot Zuppa Toscana

Servings: 6-8

❤️ what you need:

•1 lb ground sausage

•1 onion, diced

•1 to 2 tbsp minced garlic

•4 russet potatoes, cubed

•salt & pepper to taste

•4 cups chicken broth, I used nutra organics & YUM

•1 cup of water

•1 cup heavy cream or coconut milk

•2 cups spinach (or kale) I like spinach more

•shredded Parmesan for serving!

✨what to do:

•brown your sausage & dice your onion

•once sausage is 85% brown add your onion and minced garlic, cook for 3-5 until fragrant and sausage is all the way cooked. Drain any grease

•cube your potatoes & put them in the crockpot

•add sausage, onion & garlic mixture to crockpot

•add four cups of chicken broth & spices, stir

•pour water on top to make sure all potatoes are covered!

•let cook on low for 6-7 hours until potatoes are extremely soft

•add heavy cream and spinach and let cook for an additional 20-30 mins

•serve with Parmesan!
