Beef and Queso Enchiladas

Servings: 4-6 people
🍴what you need:
•1 lb ground beef
•1/2 cup of refried beans
•1 pack of taco seasoning
•1/3 cup of water
•8-12 tortillas (depending on what size you choose!) we had the medium size from Whole Foods!
•1.5 cups of shredded cheese, divided (we use cheddar) (1 cup for rolling the enchiladas up & .5 for the top!)
•10 oz can of enchiladas sauce (we always use El Paso!)
•1/4- 1/2 cup queso (depends on how cheesy you want it!)
‼️what to do:
•preheat your oven to 425 degrees F
•brown beef & drain grease
•add taco seasoning, water & refried beans to beef, cooking on low until well combined (1-2 mins), put to side
•in your oven safe baking dish put 1/3 cup of enchiladas sauce on the bottom
•roll your tortillas with beef & shredded cheese directly in the pan
•once you have used all your tortillas top with the rest of your enchilada sauce & queso, mix gently on top of your enchiladas until sauce is a pink color
•top with your remaining shredded cheese
•put in oven for 15 minutes & then broil on high until golden brown!
