Winner winner chicken dinner part 3!! Another great one for a busy week - packed with flavor & veggies that you & your whole family will love. For the seasonings listed below - feel free to add more if you (or your family) can handle more spice! We have two little ones so the spiciness needed to be toned down.
What you need:
•1.5 lbs of chicken breast
•3 bell peppers - any color
•2 onions - we used yellow!
•2 tbsp of oil of choice
•1/2 lime squeezed
•1 tsp of cumin
•1 tsp of oregano
•1/2 tsp of chili powder
•1/2 tsp of paprika
•salt & pepper - your preference
•garlic powder & onion powder to taste (we used about 1 tsp if not more or each! Measure with your heart)
•avocado & diced tomatoes for garnish! Up to you ❣️
For sauce:
•1/2 cup of Greek yogurt
•2 tbsp - 1/4 (a lil less) of water - depends on how runny your yogurt is & what consistency you’re looking for!
•1/2-1 tsp of lime zest
•1/ lime juice
•2 tsp of garlic (or more - measure with heart)
What to do:
Preheat your oven to 415 degrees F. Then, get to chopping! Slice your onions & bell peppers & place into large bowl. Then, cut your chicken into strips. I like smaller pieces, larger pieces give me the ick personally 🤪. Next, pour you oil, all seasonings, & lime juice in and give a stir. Pop into the oven for 20-25 mins (ovens are all different!) until internal temp is 165! While the chicken & veggies are cooking, combine all ingredients for your sauce & stir well.
