One Pan Skillet Enchiladas

‼️what you need:

•1 tbsp of oil (or ghee or butter - your choice)

•1 onion - diced

•1 bell pepper - diced

•1 lb of ground beef

•1 taco seasoning packet

•1 can corn - drained & rinsed

•1 - 12oz - jar of enchilada sauce

•5 tortillas - cut up into squares or strips (truly doesn’t matter your preference on the shapes!)

•1/2 - 1 cup of shredded cheddar cheese (or cheese of choice!) measure with your heart!

**Greek yogurt or sour cream if you need to dilute some of the spice! We put about a TBSP on my girls servings and they ate it so well!

👉🏻optional for toppings:

•avocado

•tomatoes

•queso

•chips

❣️what to do:

•preheat oven to 350

•in large oven safe skillet - add oil and make sure it gets hot!

•add your diced onions & bell pepper and sauté until onions are becoming translucent & bell peppers are softening

•add your ground beef and brown

•when beef is browned add your taco seasoning & stir

•add corn & stir

•add enchilada sauce & stir

•top with cut up tortillas & then top with cheese

•place in oven until cheese is melty! (Mine took about 10 ish mins)
