Lemon parm chicken orzo bake

👩🏼‍🍳what you need:

•1.5 lbs of chicken breast

•2 cups orzo

•4 cups chicken broth

•1 lemon - juiced && zested

•1 tbsp minced garlic

•1/4-1/2 cup shredded parm (up to you!)

•s&p&OP&GP - to your taste

•1 tbsp olive oil + 1 tsp (if doing arugula topping)

❣️optional:

•2 handfuls arugula

•5-6 basil leaves chopped

•balsamic drizzle

🏃🏼‍♀️‍➡️what to do:

•Preheat oven to 375 & prep your chicken. My chicken was HUGE - so I cut them in half & then seasoned.

•In an oven safe skillet - add olive oil & garlic. Wait until garlic is sizzling and then add your chicken - brown both sides - about 2-3 mins on each side & then take out of pan.

•add your orzo & toast for approx 10-15 seconds & then add the chicken broth, lemon & lemon zest (do the whole lemon! I showed how zested mine was!) and bring to a boil.

•then nestle your chicken back in the skillet & put in the oven for about 25 minutes. Take it out - give it a nice stir & then top with your parm cheese.

•turn your oven on high broil & broil until the cheese is nice and bubbly. Take out of the oven & make sure it’s at 165 internal temp then serve!!

•I highly recommend the optional toppings but it is FAB without - both of my girls loved it without the additions!
