Curry chicken salad

Roasted Garlic Balsamic Honey Brussels

❣️what you need:

•1 rotisserie chicken - 2 cups shredded

•1 tbsp mayo (if you like creamier chicken salad do 2 tbsp! I like mine chunkier)

•1/2 cup Greek yogurt

•1/2 lime - juiced

•3 green onions - sliced

•1 green apple - diced

•3 mini celery - diced finely

•1 & 1/2 tsp curry powder

•salt & pepper to taste

❣️what to do:

•chop up your veggies & apple & put in a large mixing bowl - add your lime juice, mayo & Greek yogurt (helps the apple from browning!). Then, shred your chicken & put directly into the bowl & add curry. STIIIR it up well.

** if you like it more creamy - add mayo - we like a thicker & chunkier chicken salad **
