Sheet Pan Rotisserie Chicken Nacholadas

Serves:6-8

Time: 45 mins!

‼️what you need:

•1 rotisserie chicken - shredded - I used white part only so about 2 cups

•8 tortillas (flour) 10.7 oz - medium size - not extra large burrito and not tiny taco size - I got mine from Whole Foods and it doesn’t specify what exact size but I can send you a pic of what I get 😂

•2 cups of Mexican cheese blend - divided

•1 bag (8.8 oz) of pre-cooked rice - we used Somos Mexican homemade rice

•1 tbsp of taco seasoning

•1 cup of salsa

•2 cups of enchilada sauce - we used El Paso and it was not spicy at all (perfect for the girls)

•1 can corn - drained

•1 can refried beans

*optional: queso & avocado

💕what to do:

•preheat your oven to 400 F

•shred your chicken and place in large bowl, add corn, add rice, add spices, 1 cup of cheese blend

•cut up your tortillas into strips & squares - I loved having different sizes!

•put into big bowl with your chicken & add salsa & enchiladas sauce - mix extremely well!

•on a sheet pan pour out your nacholadas mixture - then top with dollops of refried beans and the rest of your cheese

•put in oven for 30 mins!

•serve with queso & avocado!
