One Pan Marry Me Ground Chicken Orzo

💕what you need:

•1 lb ground chicken

•1 tbsp olive oil

•1-2 tbsp of minced garlic

•1/2 cup sun dried tomatoes - drained (the kind in the oil!) - I didn’t want to get out the cutting board so I left them whole and they were SO good

•3 tsp of seasoning of choice - I used salt sisters mama Mia’s herb blend! If you don’t have, Italian seasoning would be great!

•salt & pepper to taste

•1 cup orzo

•2.5 cups of chicken broth - I used lonolife

•1/2 - 3/4 coconut milk - depends on how creamy / soupy you want! I wanted it soupier so I used 3/4

•2 cups of spinach

•1 cup of fresh parm - divided (3/4s goes into orzo & the rest is to top!)

‼️what to do:

•add oil to skillet (over medium high heat) let it get hot

•add garlic & sauté for 1 minute until browning & fragrant

•add ground chicken & cook until 85% cooked through

•add sun dried tomatoes & spices - cook for 2-3 minutes

•then add orzo & stir for 1 minute until toasted (make sure to stir vigorously because it will stick!)

•next, add your chicken broth & bring to a boil

•on low heat, cover & let cook for 4 minutes

•stir then cover again for an additional 4 minutes

•add your coconut milk & parm & stir

•add spinach & alllll done!

•top with additional parm!
