Orange Ground Chicken with Coconut Rice

**if cooking for more than 2 adults + 2 kids - double the chicken/sauce or add a roasted vegetable!

‼️what you need:

👏🏻for ground chicken:

•1 lb ground chicken

•1 tbsp olive oil

•2 cubes (or two tsp) of ginger

•1 tbsp of minced garlic

•2 tbsp of rice wine vinegar

•1 tbsp of water

•1 tsp of sesame oil

•3 tbsp of soy sauce

•2 tbsp or Fresh orange juice

•1-2 tbsp of orange zest

*optional: 1 tsp of sugar

*optional: green onion for serving

👏🏻for coconut rice

•1 cup of water

•1 can of coconut milk

•1 & 1/2 cups of white rice

•Either 2 teaspoons of grated ginger or grated garlic

•1/2 teaspoon Salt (or more to your taste!)

❣️what to do:

•start on your rice first! Add all ingredients to a pot & put on the stove over high heat  (stirring regularly until it starts to boil.

•Once boil, reduce heat to low & cover. Set a timer for 5 - once timer goes off give the rice a good stir & then pop the lid back on. Set your timer again for 5-7 minutes.

•Once the timer goes off this time, give the rice a nice stir & put the lid back on and let it sit until ready to eat. Fluff & then eat!!

•while rice is cooking, put your ground chicken in hot pan with oil

•once chicken is almost browned add garlic & ginger

•then add rice wine vinegar, soy sauce, sesame oil, water, orange juice, orange zest, sugar

•mix until well combined & chicken has absorbed most of the liquid! then serve with coconut rice & a roasted veg (if you’d like!)
