Crockpot Salsa Chicken, Cheese & Rice

‼️what you need

•1-1.5 lbs of chicken breast

•1 - 15 oz jar of salsa of choice - we used late July & it was PERFECT

•1 cup of chicken bone broth - lonolife for the win

•1 tbsp of ranch seasoning

•1 lime - juiced

•salt & pepper - salt sisters in the best!

•2-2.5 cups of COOKED rice (any cooked rice) depends on how ricey you want it! 2 cups is better for leftovers because the rice continues to absorb the liquid!)

•2 cup of cheddar cheese (or cheese of choice!) - I stirred a cup in & then put a cup on top to be fancy - just put both in there and give a good stir

•queso

•avocado

‼️what to do:

•put chicken in crockpot & season with salt, pepper & ranch

•pour salsa, bone broth, & lime juice in & give a nice stir

•cook on low for 6-7 hours

•15-20 minutes before you’re about to shred your chicken, make your rice!

•shred your chicken in your crockpot (should be SO easy)

•put COOKED rice & cheese in crockpot and stir well to combine with chicken

•put lid back on for 15-30 to let everything get nice & melty & let some rice absorb a little bit more liquid! The longer you let it sit the less liquidy it will become!

•serve with your favorite toppings!
