Teriyaki Pineapple Chicken Salad
Roasted Garlic Balsamic Honey Brussels
‼️what you need:
•1 rotisserie chicken - shredded (2-2.5 cups I use the white meat only)
•1/2 cup + 2 tbsp of Greek yogurt
•1-2 tbsp of teriyaki sauce - if you LOVE your teriyaki do 2 - mine tastes a bit artificial so I only did one - if you have a good recommendation let me know 🥰
•1 tbsp of teriyaki seasoning - keto frog is the BEST
•1 lime - juiced
•1 celery stick or two mini sticks - diced
•1/2 cup of diced pineapple
•1/4 cup of green onions
•1/4-1/2 cup of toasted butter pecan pieces (up to you on how crunch you want it!)
•salt & white pepper - Salt Sisters is our go to!!
❣️what to do:
•start with toasting your pecans in butter for 2-3 minutes until fragrant - place to the side to let cool.
•make your dressing first in a big mixing bowl: combining Greek yogurt, teriyaki sauce & seasoning and lime juice. Place to the side
•chop your celery, green onions, pineapple & place in bowl. Then shred your chicken & add to bowl.
•add pecans & salt & stir!
•top with extra drizzle or teriyaki & sriracha when serving ❣️
