Pimento Cheese Chicken Salad

❣️what you need:

•1 rotisserie chicken - 2-2.5 cups shredded (I use white meat only)

•1.5 cups of extra sharp shredded cheddar

•1/2 cup of shredded parm

•1/2 cup Greek yogurt

•2 tbsp of mayo

•1/2 jar of roasted red peppers (red peppers dried off and diced)

•3 green onion stalks - sliced

•1 cup of toasted pecans (can do less if you prefer)

•1 tbsp of butter (or less if you do less pecans)

•2 tsp hot sauce of choice

•1/2 tsp of Worcestershire

•pepper & salt to taste

‼️what to do:

•first - get your pecans toasted with butter over your stove. Move to the side once fragrant.

•shred your cheese, chop your green onions & bell peppers & add to large mixing bowl.

•shred your chicken & add to large bowl. Then add your cooled pecans.

•put Greek yogurt & mayo & spices & Worcestershire into big bowl with everything else & stir stir stir!

•that’s it!!! SO good & for best flavor let sit in fridge for a minute (but can absolutely be eaten right away 🥹💕)
