Loaded Sweet Potato Fries (homemade & fried in avocado oil!)

Loaded Steak Sweet Potato Fries
❣️what you need for fries:
•5 medium size sweet potatoes (or 4 large ones - mine were on the smaller size!)
•about 2-3 cups of avocado oil (depends on what you’re frying them in- as long as the oil covers the fries you’re good!)
•salt - to taste
•1/4-1/2 cup of parm
•1 green onion (white & green - sliced)
•1/2 tsp parsley flakes (to taste)
•1/2 tsp of thyme (to taste really!)
❣️what to do for fries:
•get a large bowl out & fill with ice and water.
•then cut your potatoes up into the fry shape you want (I like my fries SUPER thin)
•put your uncooked fries into the ice bath for at least 30 mins.
•after 30 mins drain & rinse & dry those fries off & get your oil going!
•in a pan (or pot!) heat your oil to 350 & add your fries in. I had to do three batches! You do not want to over crowd!
•place to the side after 3-5 minutes & your fries are soft & limp.
•for your second round of frying increase the heat to 375 and fry the sweet potatoes for an additional 10 minutes (or until crispy and golden).
•top with Parmesan, thyme, salt, & parsley flakes!
‼️what you need for steak:
•1 flank steak (1.5lbs)
•1/4 cup olive oil
•1/8 cup balsamic vinegar
•1/8 cup soy sauce
•1-2 tbsp of garlic
•salt, pepper, garlic powder & onion powder
‼️what to do:
•marinate your steak for at least 30 mins.
•grill needs to be at 450 & then cook on each side for 4-5 minutes!
•let it rest for 10 minutes & cut up how you like it! (Cut against the grain!)
