Balsamic Chicken with Butter Brami Noodles & tomatoes, basil & mozzarella
Roasted Garlic Balsamic Honey Brussels
‼️what you need:
•1.5 lbs of chicken - cubed
•1 tbsp of balsamic vinegar
•1 box of Brami pasta (love to use this because even if the kids only eat butter noodles they are getting protein from the pasta!)
•10-12 (however many you want honestly) cherry tomatoes - quartered
•4-6 basil leaves chopped or sliced
•mozzarella (slices or balls - diced up)
•2 tbsp of butter (can use oil if you prefer!)
•1 tbsp of ghee for cooking chicken (any oil you want or butter is fine!)
•at least 1 tbsp (probably more I measured with my heart!) seasoning of choice - I used keto frog & it was SO good
•drizzle of olive oil & drizzle of balsamic vinegar on top
❣️what to do:
•start your water on the stove & get that boiling. Cook your pasta based off of the box instructions!
•cube your chicken and season heavily - get your cast iron hot (with ghee) and then cook chicken until golden brown & at least internal temp of 165!
•while your chicken is cooking, prepare your mozzarella, tomatoes & basil & place to the side.
•once your pasta is cooked - drain & then add 2 tbsp of butter (salt & pepper) and place to the side
•once your chicken is cooked - turn off stove & then add your 1 tbsp of balsamic vinegar - stir until chicken is coated well!
•serve all together!!! && top with your olive oil & balsamic drizzle (must do!!)
My favorite part of this meal is it truly is a choose your own adventure meal! If your child doesn’t want tomatoes (moz, chicken, etc) - don’t put them in their bowl! It’s a great recipe because you get a very put together meal but the base is still a great protein butter noodle so everyone wins!
